Cooking class on Finnish and Karelian cuisine

The round table and cooking class on Finnish and Karelian cuisine were held at the Petrozavodsk College of Technology and Entrepreneurship on 10th of August. The meeting was organized due to the collaboration of the “Kalitka” project with the Finland-Russia Society (Haapavesi branch), namely culinary project “Ladle of Cultures” and with the assistance of the Karelia-Finland Friendship Society.

“Ladle of Cultures” is an exchange project of Haapavesi City aimed at the development of food tourism between Finland and Russia. The project idea was discussed during the Russian-Finnish Forum in Savonlinna in 2018 and this was the beginning of cooperation between partners. - said the project coordinator, chairman of the Haapavesi branch of the Finland-Russia Friendship Society, Diana Seppya. - In 2019 delegations from Syktyvkar, Belomorsk, Kostomuksha, Medvezhyegorsk, Pitkäranta, St. Petersburg will travel to Finland to get acquainted with the Finnish traditional cuisine and learn from the experience of foreign chefs. In 2020, the Finnish participants will come to the Russian regions for the same purpose. The project is funded by Keskipiste Leader and the Center for Economic Development, Transport and the Environment of the Northern Ostrobothnia Region.

Ronald von Schulman, Henri Kolehmainen, members of the Finland-Russia Society, and Karelian chef Tarmo Vasenius composed the following menu: beef with chanterelles, tomato soup, trout salad, Finnish flatbreads and, certainly, Karelian kalitkas. The Russian and Finnish guests could not only observe the process, but participate in the cooking process guided by Finnish chiefs, and then evaluate the taste of each dish.

At the round table, the partners of the Kalitka project Anna Mugacheva (NGO Art-Shater), Olga Nazarova and Vladimir Gromov (Onego-Tour) and Ekaterina Shlapeko and Svetlana Stepanova (Institute of Economics of the KarRC of RAS) proposed to continue the exchange of projects information and interaction on the organization of master classes with the involvement of a student audience.
